In the past, people with dysphagia who wanted to eat food with "bones" might not dare to eat because they were worried that they would not be able to chew it. Therefore, Master Gan created a new dish for nursing care, using pork instead of bone-in, and mincing the pork into puree. After adjusting the texture of the food, pour it into the mold to restore the appearance and taste of the "boneless bone", allowing them to taste this delicacy again.
Haven of Hope Christian Association’s Care Food Recipes for Staff Canteen
Honey-glazed peach bone-in-bone (for 3-5 people) - Level 4*
Ingredients:
Canned peaches: 300g, 150ml hot water, 60g sugar, 8.1g soft meal enzyme
Pork slices: 400g, hot water 480ml, soft meal enzyme 13.2g
Seafood Sauce:
4 tsp hoisin sauce; 2.5 tsp sweet sauce; 2 tsp bean paste; a little oil
Tools: One-bone shape mold
Preparation in advance:
- Prepare canned peaches for later use
- Season the pork slices with sugar, soy sauce, green onion, ginger and oyster sauce according to taste, marinate for 20 minutes, steam until cooked and set aside
Steps:
1. Cut the steamed pork slices into fine pieces, put them into a blender, add an appropriate amount of hot water, and beat for about 7 minutes until there are no grains. Then add an appropriate amount of soft meal enzyme and heat it to 100°C to become a liquid.
2. Pour into the corresponding straight-shaped bone mold. After solidification, the mold can be thrown out and set aside.
3. Chop the canned peaches into fine pieces, put them into a blender, add an appropriate amount of hot water, and beat for about 3 minutes until there are no grains. Then add an appropriate amount of soft meal enzyme and heat to 100°C to form a liquid.
4. Pour into the corresponding mold. The above two ingredients can be processed with a household blender: put the ingredients, water and soft meal enzyme into the household blender and blend until smooth and without particles, heat until slightly smoking and bubbling, and then pour into the mold.
5. After the above ingredients are frozen, remove the mold and cut the solidified peaches into half-moon shapes for later use.
6. After the bone is cast out of the mold, you can add the seafood sauce prepared in advance (mixed with food coagulation powder) and apply the thickened sauce on the front and back of each bone.
7. Place all ingredients on the plate
Nursing food tip: Warm nursing food to make it taste better. But remember not to heat it above 70°C, otherwise it will change the shape and texture of the food and affect eating.
