Theme: Elderly people can safely enjoy healthy and nutritious food and celebrate festivals with family and friends

Main dish: Liyue Longmen to celebrate the Mid-Autumn Festival (egg and pumpkin paste) IDDSI level 4

Side dish: Tofu and coconut milk pudding IDDSI level 6

 

Creativity and design concepts

 

We see that fish in the eyes of Chinese people means good luck and liveliness, so we hope that through the shape of carp, we can express that the elderly can leap over the dragon's gate and still be able to exert their abilities and break through limitations despite the limitations of their body functions! On the other hand, pumpkins, eggs, wolfberries, etc. are all very nutritious foods. It is hoped that the use of nutritious food in dishes can supplement the health needs of the elderly.

 

story behind

 

We have observed that many elderly people with dysphagia cannot eat festive food with their families during festivals. We really feel sorry for them. Therefore, we specially designed two dishes for two traditional Chinese festivals. We hope that the elderly can learn the names of the dishes. The meaning and appearance of the dishes allow you to feel the festive atmosphere with your relatives and friends, and even bring your children and grandchildren together to share the family relationship!

 

Entry recipes:

 

Carp leaping over the dragon gate to celebrate the Mid-Autumn Festival (egg and pumpkin paste) IDDSI level 4

 

Ingredients:

  • 5 eggs
  • 2 pounds pumpkin

 

Seasoning/Sauce:

  • Salt   A small amount of salt
  • Chicken powder  a small amount
  • Coagulating powder  A small amount
  • Food coagulant   A small amount

 

Cooking method:

  1. First cut and peel the pumpkin, then steam it in hot water, and steam the eggs in hot water at the same time
  2. Then use a blender to mash the pumpkin meat and eggs, then add coagulation powder, food coagulant and seasonings
  3. Finally, pour the food out, use food molds to shape the food (carp shape), and add sauces and decorations to add color to the food

 

Tofu Coconut Pudding IDDSI Level 6

 

Ingredients:

  • Tofu, coconut milk  300g
  • Fruit in moderation

 

Cooking method:

  1. Steam the tofu first, then stir it with coconut milk for 30 seconds.
  2. Take out all the ingredients and cook them again, then add the food thickening powder, stir the food for 30 seconds, wait for 15 seconds and then stir for another 30 seconds.
  3. Finally, finely chopped fruits such as mango are placed on the pudding.
